Mediterranean Spinach & Feta Crisps
Crispy, savory, and packed with Mediterranean flavor, these little spinach and feta bites are easy to make and perfect for snacking, appetizers, lunchboxes, or as a light side dish.

Ingredients
- 4 cups fresh spinach, finely chopped
- 1 cup crumbled feta cheese
- 2 large eggs
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons almond flour
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- ½ teaspoon dried dill
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
- 1 tablespoon olive oil
- Salt, only if needed
Instructions
- Prepare the spinach: Wash and finely chop the spinach. Place it in a skillet over medium heat and cook for 2–3 minutes until wilted. Let it cool slightly.
- Remove excess moisture: Transfer the cooked spinach to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is important because excess moisture will prevent the crisps from becoming crunchy.
- Make the mixture: In a large bowl, combine the spinach, feta, mozzarella, Parmesan, eggs, almond flour, garlic, parsley, oregano, dill, black pepper, and red pepper flakes.
- Mix well: Stir everything together until you have a thick, evenly combined mixture. Taste before adding salt because feta and Parmesan can already be quite salty.
- Form the crisps: Line a baking sheet with parchment paper and lightly brush it with olive oil. Scoop about 1 tablespoon of the mixture for each crisp and place it on the sheet. Flatten each mound into a thin round, leaving a little space between them.
- Bake: Bake at 400°F (200°C) for 15–20 minutes, or until the edges are golden brown and crisp.
- Make them extra crispy: For deeper browning, switch to the broiler for the final 1–2 minutes. Watch them carefully so they don’t burn.
- Cool: Let the crisps rest on the baking sheet for 3–5 minutes. They will firm up further as they cool.
🥣 Easy Mediterranean Dip
Mix together:
- ½ cup Greek yogurt
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- 1 tablespoon chopped parsley or dill
- Black pepper to taste
Serve the warm spinach-feta crisps with the cool yogurt dip.

These crisps contain protein from feta, mozzarella, Parmesan, and eggs, while almond flour keeps the carbohydrate content relatively low. For an even higher-protein version, use extra egg whites or a little more low-fat cottage cheese/Greek yogurt in the mixture.
Tip: The thinner you spread the crisps and the more moisture you squeeze from the spinach, the crispier they will become.
