  • 1 cup almond flour
  • ½ cup vanilla protein powder (low-carb)
  • 1 medium apple, finely grated
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • ¼ cup egg whites
  • ¼ cup chopped pecans or walnuts
  • 2 tablespoons powdered monk fruit sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

1. Prepare the oven

5. Add apples and nuts

Fold in the grated apple and chopped pecans or walnuts. Mix gently until evenly distributed.

6. Fill the muffin cups

Divide the batter evenly among the mini muffin cups, filling each about ¾ full.

7. Bake

Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

8. Cool and enjoy

Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack. Enjoy warm or chilled!
