High-Protein Low-Carb Caramel Apple Pecan Crescent Ring

Keto-Inspired • Protein-Rich • Creamy • Cinnamon-Caramel Flavor

Enjoy all the cozy flavors of caramel apple pie in a delicious crescent ring! This lighter version uses a high-protein dough, creamy cottage cheese filling, cinnamon-spiced apples, crunchy pecans, and sugar-free caramel drizzle. No regular crescent dough or added sugar needed.

Prep Time: 20 minutes
Cook Time: 25–30 minutes
Total Time: 50 minutes
Servings: 8 slices

Ingredients

For the low-carb high-protein dough:

  • 1½ cups almond flour
  • ½ cup unflavored whey protein powder
  • ½ cup low-fat cottage cheese, blended smooth
  • 1 large egg
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp vanilla extract

For the apple cheesecake filling:

  • 2 oz reduced-fat cream cheese, softened
  • ½ cup low-fat cottage cheese, blended
  • 1 scoop vanilla protein powder (about 25–30 g)
  • 1 small apple, finely diced (preferably Granny Smith)
  • 1 tsp cinnamon
  • 1 tbsp butter
  • 1–2 tbsp powdered erythritol or preferred sweetener
  • ½ tsp vanilla extract

For the topping:

  • ¼ cup chopped pecans
  • 2 tbsp sugar-free caramel sauce
  • 1 tbsp melted butter
  • ½ tsp cinnamon

Instructions

1. Preheat the oven: Set oven to 350°F (175°C). Line a baking tray with parchment paper.

2. Make the dough: In a bowl, combine almond flour, protein powder, baking powder, and salt. Add blended cottage cheese, egg, and vanilla. Mix until a soft dough forms.

3. Shape the crescent ring: Roll the dough between two sheets of parchment into a large circle. Cut 8–10 triangular sections around the edges, leaving the center connected so you can fold them over the filling.

4. Cook the apples: Melt butter in a skillet over medium heat. Add diced apple, cinnamon, and sweetener. Cook for 4–5 minutes until slightly softened. Allow to cool.

5. Prepare the cheesecake filling: Beat cream cheese, blended cottage cheese, vanilla protein powder, sweetener, and vanilla extract until smooth and creamy.

6. Fill the ring: Spread the cheesecake mixture around the center of the dough. Spoon the cinnamon apples evenly over the filling.

7. Fold the dough: Fold the pointed sections over the filling and tuck the ends underneath to form a beautiful ring.

8. Bake: Brush with melted butter and bake for 25–30 minutes until golden brown and cooked through.

9. Add toppings: Allow to cool for 10 minutes. Drizzle with sugar-free caramel sauce and sprinkle with chopped pecans and cinnamon.

10. Serve: Slice into 8 portions and enjoy warm with coffee or tea!

Weight-Loss & Low-Carb Tips

  • Use only one small apple to keep carbohydrates lower.
  • Choose unsweetened almond flour.
  • Use sugar-free caramel sauce.
  • Select a protein powder with minimal carbohydrates.
  • Keep pecan portions measured because nuts are calorie-dense.
  • Serve one slice with unsweetened coffee for a satisfying breakfast or dessert.

Lower-carb

Important: This is a lower-carb, high-protein alternative, not a zero-carb recipe or strict keto guarantee. Apples and cottage cheese still contribute carbohydrates.
