This Frost-Bite Fluff is a thick, creamy, ice-cream-like treat that tastes like a frozen dessert! It’s light, fluffy, satisfying, and packed with protein. Perfect for curbing sweet cravings while keeping your nutrition goals on track.
Ingredients
- 1 cup ice cubes
- ½ cup unsweetened almond milk
- 1 scoop (30g) vanilla whey protein powder
- ½ cup nonfat Greek yogurt
- 1 tbsp sugar-free vanilla pudding mix
- ½ tsp vanilla extract
- 1–2 tsp powdered erythritol or stevia, to taste
- Pinch of xanthan gum (optional, for extra thickness)
Instructions
1. Prepare the blender: Add almond milk, Greek yogurt, vanilla protein powder, sugar-free pudding mix, vanilla extract, and sweetener to a high-powered blender.
2. Add ice: Add ice cubes gradually. Blend until the mixture becomes thick, smooth, and creamy.
3. Make it fluffy: Add a tiny pinch of xanthan gum if desired. Blend for another 15–20 seconds until the texture becomes thick and airy.
4. Adjust consistency: If too thick, add a tablespoon of almond milk. If too thin, add a few more ice cubes and blend again.
5. Freeze briefly: Transfer to a chilled bowl and place in the freezer for 10–15 minutes for a firmer, ice-cream-like texture.
6. Serve: Spoon into a dessert bowl and enjoy immediately. Add a few sugar-free chocolate chips or fresh raspberries if desired.
