Main ingredients
- 1 ripe banana
- ½ cup cottage cheese
- 2 large eggs
- ¾ cup rolled oats
- ½ teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla extract
- Pinch of salt
- 1 teaspoon coconut oil or butter, for greasing

- Preheat the oven
Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan with coconut oil or butter. - Blend the wet ingredients
Add the banana, cottage cheese, eggs, and vanilla extract to a blender. Blend until smooth and creamy. - Add the dry ingredients
Add the rolled oats, baking powder, cinnamon, and salt. Blend again briefly until the oats are finely broken down and the batter is thick and smooth.
Don’t overblend—the batter should be similar to a thick pancake batter.
- Rest the batter
Let the batter sit for 5 minutes. The oats will absorb some of the moisture and the batter will thicken slightly. - Fill the muffin pan
Pour the batter into the greased mini muffin cups, filling each about ¾ full. If using chocolate chips, berries, or nuts, gently sprinkle them on top. - Bake
Bake for approximately 15–18 minutes, or until the pancake bites are puffed, lightly golden, and a toothpick inserted in the center comes out clean. - Cool
Allow them to cool in the pan for about 5 minutes, then carefully remove them and transfer to a plate or cooling rack.
