🥞 Cottage Cheese Banana Oat Protein Pancake Bites

Soft • Fluffy • High-Protein • Naturally Sweetened

These mini pancake bites are made with cottage cheese, eggs, oats, and ripe banana. They’re easy to prepare and make a convenient breakfast or snack.

🛒 Ingredients

Main ingredients

  • 1 ripe banana
  • ½ cup cottage cheese
  • 2 large eggs
  • ¾ cup rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • Pinch of salt
  • 1 teaspoon coconut oil or butter, for greasing

Optional add-ins

  • 1 tablespoon protein powder for extra protein
  • 1–2 tablespoons mini chocolate chips
  • A small handful of blueberries
  • 1 tablespoon chopped walnuts or pecans

👩‍🍳 Instructions

  1. Preheat the oven
    Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan with coconut oil or butter.
  2. Blend the wet ingredients
    Add the banana, cottage cheese, eggs, and vanilla extract to a blender. Blend until smooth and creamy.
  3. Add the dry ingredients
    Add the rolled oats, baking powder, cinnamon, and salt. Blend again briefly until the oats are finely broken down and the batter is thick and smooth.

Don’t overblend—the batter should be similar to a thick pancake batter.

  1. Rest the batter
    Let the batter sit for 5 minutes. The oats will absorb some of the moisture and the batter will thicken slightly.
  2. Fill the muffin pan
    Pour the batter into the greased mini muffin cups, filling each about ¾ full. If using chocolate chips, berries, or nuts, gently sprinkle them on top.
  3. Bake
    Bake for approximately 15–18 minutes, or until the pancake bites are puffed, lightly golden, and a toothpick inserted in the center comes out clean.
  4. Cool
    Allow them to cool in the pan for about 5 minutes, then carefully remove them and transfer to a plate or cooling rack.

🍌 Serving Ideas

Serve warm with:

  • Greek yogurt
  • Peanut or almond butter
  • Fresh berries
  • A little mashed banana
  • Unsweetened applesauce

The banana provides natural sweetness, so additional sugar isn’t necessary.

💪 Protein Tip

For an even higher-protein version, add 1 tablespoon of protein powder to the batter. You can also serve the pancake bites with Greek yogurt or extra cottage cheese.

❄️ Storage

Refrigerator: Store in an airtight container for up to 3–4 days.

Freezer: Freeze in a single layer, then transfer to a freezer-safe container or bag for up to 2 months.

To serve, thaw in the refrigerator or warm gently in the microwave.

⭐ Tips for Perfect Pancake Bites

  • Use a very ripe banana for the best natural sweetness.
  • Full-fat or low-fat cottage cheese both work.
  • If your cottage cheese is very watery, drain a little liquid first.
  • Don’t overbake or the bites can become dry.
  • Let the batter rest before baking so the oats can absorb moisture.
  • For a smoother texture, blend the oats into a fine flour before adding them.
  • If adding berries, gently fold them in rather than blending them.

Approximate yield: 18–20 mini pancake bites, depending on the size of your muffin pan.
