Sugar-Free 3-Ingredient Keto Cheesecake Fluff

Light, creamy, rich, and deliciously sweet—this easy no-bake cheesecake fluff comes together with just 3 main ingredients. It’s perfect when you want a quick keto-friendly dessert without turning on the oven.

🛒 Ingredients

Makes 6 servings

  • 8 oz (226 g) cream cheese, softened to room temperature
  • ⅓ cup powdered monk fruit sweetener
  • 1 cup (240 ml) heavy whipping cream

👩‍🍳 Detailed Instructions

  1. Soften the cream cheese
    Take the cream cheese out of the refrigerator about 30–60 minutes before making the recipe. Softened cream cheese blends much more smoothly.
  2. Beat the cream cheese
    Place the softened cream cheese in a large mixing bowl. Using a hand mixer, beat on medium speed for 1–2 minutes until completely smooth and fluffy.

Scrape down the sides of the bowl as needed.

  1. Add the sweetener
    Add the powdered monk fruit sweetener gradually. Beat for another 1–2 minutes until incorporated and creamy.

Taste and adjust the sweetness if needed.

  1. Add the heavy cream
    Pour the cold heavy whipping cream into the cream-cheese mixture.

Start mixing on low speed so the cream doesn’t splash, then gradually increase to medium-high speed.

Beat for approximately 2–4 minutes, until the mixture becomes thick, fluffy, and holds soft-to-medium peaks.

⚠️ Don’t overbeat. Once the mixture is thick and fluffy, stop mixing. Overbeating can eventually turn the cream grainy.

  1. Chill
    Spoon or pipe the cheesecake fluff into 6 small dessert cups.

Cover and refrigerate for at least 30 minutes. For an even firmer texture, chill for 1–2 hours.

🍋 Flavor Variations

Lemon Cheesecake:
Add 1 tsp lemon zest and 1–2 tsp fresh lemon juice.

Chocolate:
Add 1–2 tbsp unsweetened cocoa powder. You may want a little additional sweetener.

Berry Cheesecake:
Fold in a few chopped strawberries, raspberries, or blueberries just before chilling.

Vanilla:
Add ½–1 tsp vanilla extract for a classic cheesecake flavor.

Cinnamon:
Add ¼ tsp cinnamon for a warm, lightly spiced version.

  • Unsweetened shredded coconut
