  • 2 large eggs β€” ~12 g protein
  • 1 scoop vanilla protein powder β€” ~17 g protein
  • 2 tbsp Greek yogurt β€” ~2 g protein

  • Β½ tsp vanilla extract
  • Pinch of cinnamon
  • Tiny pinch of salt
  • Nonstick cooking spray

  1. Prepare the batter: Add the eggs, Greek yogurt, vanilla protein powder, baking powder, vanilla extract, cinnamon, and salt to a mixing bowl.
  2. Whisk well until everything is combined. The batter will be thicker than regular pancake batter.
  3. Adjust the consistency: Add 1 tbsp milk or water and mix. If the batter is still too thick to pour easily, add another tablespoon.
  4. Let it rest for 1–2 minutes. This gives the baking powder time to activate and helps create softer pancakes.
  5. Heat your pan over low to medium-low heat. Lightly coat with nonstick cooking spray.
  6. Cook the pancakes: Pour a small amount of batter into the pan to make 4–5 pancakes. Keeping them small makes them easier to flip.
  7. Cook for about 1½–2Β½ minutes, until the edges look set and small bubbles appear on the surface.
  8. Flip gently and cook for another 1–2 minutes, or until golden and cooked through.
  9. Stack and decorate: Place the pancakes on a plate and layer the sliced strawberries and blueberries over the top.
