Cook: 5β7 minutes
Protein: ~31 g before toppings
π Ingredients
For the pancakes
- 2 large eggs β ~12 g protein
- 1 scoop vanilla protein powder β ~17 g protein
- 2 tbsp Greek yogurt β ~2 g protein
- Β½ tsp baking powder
- 1β2 tbsp milk or water, as needed
- Β½ tsp vanilla extract
- Pinch of cinnamon
- Tiny pinch of salt
- Nonstick cooking spray
ππ« Fresh topping
- 3β4 strawberries, sliced
- ΒΌ cup blueberries
- 1 tbsp Greek yogurt, optional
- 1β2 tsp sugar-free maple syrup, optional
- Optional: a few small chocolate chips for extra sweetness
π©βπ³ Instructions
- Prepare the batter: Add the eggs, Greek yogurt, vanilla protein powder, baking powder, vanilla extract, cinnamon, and salt to a mixing bowl.
- Whisk well until everything is combined. The batter will be thicker than regular pancake batter.
- Adjust the consistency: Add 1 tbsp milk or water and mix. If the batter is still too thick to pour easily, add another tablespoon.
- Let it rest for 1β2 minutes. This gives the baking powder time to activate and helps create softer pancakes.
- Heat your pan over low to medium-low heat. Lightly coat with nonstick cooking spray.
- Cook the pancakes: Pour a small amount of batter into the pan to make 4β5 pancakes. Keeping them small makes them easier to flip.
- Cook for about 1Β½β2Β½ minutes, until the edges look set and small bubbles appear on the surface.
- Flip gently and cook for another 1β2 minutes, or until golden and cooked through.
- Stack and decorate: Place the pancakes on a plate and layer the sliced strawberries and blueberries over the top.
- Add a spoonful of Greek yogurt and a light drizzle of sugar-free syrup if desired.
ππ« Serving idea
For a pretty cafΓ©-style presentation, stack the pancakes high, arrange strawberry slices around the top, scatter blueberries between them, and finish with a tiny drizzle of syrup.
