π₯π Keto-Friendly Beetroot, Cucumber & Ginger Juice
Servings: 2
Prep: 10 minutes
Carbs: Lower-carb than the original; exact carbs depend on the size of the vegetables and whether you strain the juice.
π Ingredients
- 1 small beetroot, peeled and chopped
- 1 large cucumber, chopped
- ΒΌ cup pineapple chunks β optional, for flavor
- 1-inch piece fresh ginger, peeled
- 1Β½ cups cold water
- Juice of Β½ lemon
- Ice cubes, optional
- A few mint leaves, optional
π©βπ³ Method
- Prepare the vegetables
Wash and peel the beetroot and ginger. Chop the beetroot and cucumber into small pieces so they blend easily. - Add to blender
Place the beetroot, cucumber, pineapple, ginger and cold water into a high-speed blender. - Blend
Blend for about 45β60 seconds, until completely smooth. - Add lemon
Pour in the lemon juice and blend for another 5β10 seconds. - Strain or keep the pulp
For a juice-like drink, strain through a fine-mesh strainer.
For more fiber and a thicker drink, donβt strain. - Serve
Pour over ice and garnish with mint or a thin cucumber slice.
π‘ Make it even more keto
For stricter keto, leave out the pineapple and use:
- 1 small beetroot
- 1 large cucumber
- Ginger
- Lemon
- Water
- Ice
You can also add a little lime juice for extra flavor without adding much carbohydrate.
π₯€ Important note
This can be a refreshing low-carb drink, but it isnβt a true βdetoxβ treatment or a substitute for meals. Your liver and kidneys already handle detoxification naturally. Also, beetroot and pineapple are the main carb sources, so portion size matters if youβre following strict keto.
