🛒 Ingredients — Makes 4 Tacos
For the tacos:
- 8 oz (225 g) lean ground beef, preferably 90–95% lean
- 4 small low-calorie or high-protein tortillas
- 4 slices reduced-fat cheddar or mozzarella
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
Burger sauce:
- 3 tbsp light Greek yogurt
- 1 tbsp light mayonnaise
- 1 tbsp sugar-free ketchup
- 1 tsp yellow mustard
- 1 tbsp finely diced pickles
- Pinch of garlic powder
Toppings:
- Shredded lettuce
- Diced onion
- Diced pickles
- Tomato, optional

- Prepare the sauce:
Mix Greek yogurt, light mayonnaise, ketchup, mustard, diced pickles, and garlic powder. Refrigerate while preparing the tacos. - Prepare the beef:
Divide the lean ground beef into 4 equal portions. Roll each portion into a loose ball. Season lightly with salt, pepper, garlic powder, and onion powder. - Build the smash tacos:
Place one tortilla on a hot nonstick skillet. Put a portion of beef directly on top and press it firmly into a very thin layer, spreading almost to the edges of the tortilla. - Cook:
Cook beef-side down over medium-high heat for about 2–3 minutes, pressing gently with a spatula so the beef makes good contact with the pan. - Flip:
Once the beef is browned and crisp around the edges, carefully flip the tortilla. - Add cheese:
Place one slice of reduced-fat cheese over the beef. Cook for another 1–2 minutes, until the tortilla becomes golden and crunchy and the cheese melts. - Add toppings:
Remove from the pan and immediately add shredded lettuce, onion, pickles, and a small amount of burger sauce. - Fold and serve:
