Keto Strawberry Cheesecake Fat Bombs

Creamy, tangy, strawberry-filled, and deliciously rich—these little cheesecake fat bombs make an easy low-carb, keto-friendly treat when you want something sweet without regular sugar.

🥣 Ingredients

  • 8 oz (225 g) full-fat cream cheese, softened
  • 3 tbsp unsalted butter, softened
  • 2–3 tbsp powdered monk fruit sweetener, to taste
  • 1 tsp vanilla extract
  • 1–2 tbsp heavy cream, as needed
  • ⅓ cup finely chopped fresh strawberries
  • 1 tbsp strawberry-flavored sugar-free jam or preserves, optional
  • 1–2 tbsp unsweetened shredded coconut, optional, for coating

👩‍🍳 Instructions

  1. Prepare the cream cheese
    Let the cream cheese and butter soften at room temperature. This helps create a smooth, lump-free mixture.
  2. Make the cheesecake mixture
    Add cream cheese, softened butter, monk fruit sweetener, and vanilla to a mixing bowl. Beat with a hand mixer until smooth and creamy.
  3. Add the strawberries
    Gently fold in the finely chopped strawberries. If using sugar-free strawberry preserves, swirl them through the mixture for extra strawberry flavor.
  4. Chill the mixture
    Refrigerate for about 30–45 minutes, or until firm enough to scoop and shape.
  5. Shape the fat bombs
    Scoop out approximately 1 tablespoon of the mixture at a time and roll into small balls. If desired, roll them lightly in unsweetened shredded coconut.
  6. Freeze
    Place the balls on a parchment-lined plate or tray. Freeze for 1–2 hours, until firm.
  7. Serve
    Let them sit at room temperature for about 5–10 minutes before eating so they become creamy rather than rock-hard.

  • Refrigerator: Store in an airtight container for up to 5 days.
  • Freezer: Freeze for up to 1 month. Keep them in a sealed freezer-safe container and thaw briefly before serving.

💡 Keto Tips

  • Use powdered monk fruit sweetener so the texture stays smooth.
  • Choose unsweetened strawberries and check the label on sugar-free preserves for added carbs.
  • For a firmer texture, freeze longer.
  • For a more cheesecake-like flavor, add 1–2 teaspoons of fresh lemon juice.
  • For extra protein, you can mix in a small amount of unflavored or vanilla protein powder, although this will change the texture slightly.
