Creamy, rich, chocolatey, and incredibly easy to make, these no-bake peanut butter protein balls are perfect when you want something sweet without spending time in the kitchen. They’re packed with protein, require just a few ingredients, and can be kept in the refrigerator for a quick snack or post-workout treat.

Ingredients
- 1 cup natural creamy peanut butter
- ½ cup vanilla or chocolate protein powder
- ¼ cup almond flour
- 2 tablespoons powdered erythritol or your preferred zero-sugar sweetener
- 1 teaspoon vanilla extract
- 2–3 tablespoons unsweetened almond milk, as needed
- ¼ cup sugar-free dark chocolate chips or chopped dark chocolate
- 1 teaspoon coconut oil, optional, for melting the chocolate
- Pinch of salt, if your peanut butter is unsalted
Instructions
- Make the mixture: Add the peanut butter, protein powder, almond flour, sweetener, vanilla extract, and salt to a mixing bowl. Stir until everything is well combined.
- Adjust the consistency: The mixture should be thick enough to roll into balls but not dry or crumbly. If it feels too dry, add almond milk 1 tablespoon at a time until you reach a soft, moldable consistency.
- Add chocolate: Fold in the dark chocolate chips. For an even richer chocolate flavor, you can use sugar-free dark chocolate chips.
- Shape the balls: Scoop out about 1 tablespoon of the mixture at a time and roll between your palms to form small balls. Place them on a parchment-lined plate or tray.
- Optional chocolate coating: Melt the dark chocolate with the coconut oil in short 15–20-second intervals in the microwave, stirring between each interval. Drizzle the melted chocolate over the balls or dip the bottoms into the chocolate.
- Chill: Refrigerate for at least 30 minutes, or until firm. For a firmer texture, chill for about 1 hour.
- Store: Keep the protein balls in an airtight container in the refrigerator for up to about 1 week. They can also be frozen for longer storage.
