- 1 tsp vanilla extract
- 1–2 tbsp heavy cream, as needed
- ⅓ cup finely chopped fresh strawberries
- 1 tbsp strawberry-flavored sugar-free jam or preserves, optional
- 1–2 tbsp unsweetened shredded coconut, optional, for coating

- Prepare the cream cheese
Let the cream cheese and butter soften at room temperature. This helps create a smooth, lump-free mixture. - Make the cheesecake mixture
Add cream cheese, softened butter, monk fruit sweetener, and vanilla to a mixing bowl. Beat with a hand mixer until smooth and creamy. - Add the strawberries
