36g Protein Mushroom Swiss Burger Bowl

All the flavors of a juicy mushroom Swiss burger—seasoned beef, golden mushrooms, melted Swiss cheese, and a creamy sauce—served in a satisfying bowl instead of a traditional bun. It’s an easy high-protein, lower-carb dinner that works well for a quick weeknight meal.

🧾 Ingredients

For the Burger

  • 8 oz (225 g) lean ground beef, 90–95% lean
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ¼ tsp salt

For the Mushrooms

  • 6 oz (170 g) mushrooms, sliced
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • ½ tsp dried thyme
  • Pinch of salt and black pepper

For the Bowl

  • 2 slices Swiss cheese, about 1 oz each
  • 2 cups chopped lettuce or mixed greens
  • ½ cup cherry tomatoes, halved
  • ¼ cup thinly sliced red onion
  • 2 tbsp chopped dill pickles, optional

Creamy Burger Sauce

  • ¼ cup plain Greek yogurt
  • 1 tbsp light mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp pickle juice
  • ¼ tsp garlic powder
  • Black pepper, to taste

👩‍🍳 Instructions

1. Make the burger sauce

In a small bowl, whisk together the Greek yogurt, light mayonnaise, Dijon mustard, pickle juice, and garlic powder.

Season with a little black pepper. Refrigerate while preparing the rest of the bowl.

2. Season the beef

Place the lean ground beef in a bowl and add garlic powder, onion powder, smoked paprika, black pepper, and salt.

Mix gently until the seasonings are evenly distributed. Don’t overmix, as this can make the beef tough.

3. Cook the mushrooms

Heat a skillet over medium-high heat and add the olive oil.

Add the sliced mushrooms and cook for 4–6 minutes, stirring occasionally, until they become golden brown and most of their moisture has cooked away.

Add the minced garlic and thyme and cook for another 30–60 seconds.

Transfer the mushrooms to a plate.

4. Cook the beef

Using the same skillet, add the seasoned ground beef.

Cook for approximately 5–7 minutes, breaking it into bite-sized crumbles with a spatula, until fully cooked.

If there is excess fat, drain it before continuing.

5. Add the Swiss cheese

Reduce the heat to low.

Divide the cooked beef into two portions in the skillet and place one slice of Swiss cheese over each portion.

Cover the skillet for 1–2 minutes, allowing the cheese to melt.

6. Assemble the bowls

Divide the chopped lettuce between two bowls.

Top each with half of the cheesy beef, followed by the sautéed mushrooms.

Add cherry tomatoes, red onion, and chopped pickles.

7. Finish with sauce

Drizzle the creamy burger sauce over each bowl.

For extra flavor, sprinkle with a little black pepper or fresh parsley.

  • Use 90–95% lean ground beef to keep the protein high while reducing excess fat.
  • Greek yogurt in the sauce adds protein and creates a creamy texture.
  • Skip croutons, fries, or a traditional burger bun to keep carbohydrates lower.
  • For even more protein, increase the lean beef slightly or add a spoonful of Greek yogurt-based sauce.
  • Exact protein depends on the beef, cheese, and yogurt brands. If you’re targeting 36 g protein per serving, check the nutrition labels and adjust the beef portion accordingly.

🍽️ Optional Additions

For extra volume without adding much carbohydrate, add:

  • Sautéed zucchini
  • Roasted broccoli
  • Bell peppers
  • Cauliflower
  • Extra mushrooms
