Crispy on the outside, cheesy and flavorful on the inside, these baked spinach mushroom quesadillas make an easy lunch, light dinner, or satisfying snack. Baking them instead of pan-frying keeps them simple and hands-off.

🧾 Ingredients
- 2 cups fresh spinach
- 1 tbsp olive oil
- 1½ cups mushrooms, thinly sliced
- 2 cloves garlic, minced
- ½ tsp Italian seasoning
- ¼ tsp black pepper
- ¼ tsp salt
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar or Monterey Jack cheese
- 4 medium flour tortillas
- 2 tbsp finely chopped onion, optional
- ¼ tsp red pepper flakes, optional

👩🍳 Instructions
1. Preheat the oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. Cook the mushrooms
Heat the olive oil in a large skillet over medium-high heat.
Add the sliced mushrooms and cook for 4–5 minutes, stirring occasionally, until they release their moisture and begin to turn golden.
3. Add the spinach
Add the minced garlic and cook for about 30 seconds.
Add the fresh spinach and cook for 1–2 minutes, stirring until wilted.
Season with Italian seasoning, salt, black pepper, and red pepper flakes if using.
Remove from the heat and allow the mixture to cool for a few minutes.
Tip: If the spinach and mushrooms look very wet, drain or squeeze out excess moisture. This helps prevent soggy quesadillas.
4. Assemble the quesadillas
Place the tortillas on a clean surface.
Spread the spinach-mushroom mixture over half of each tortilla, leaving a small border around the edges.
Sprinkle the mozzarella and cheddar evenly over the filling.
Fold each tortilla in half to create a half-moon shape.
5. Bake
Place the quesadillas on the prepared baking sheet.
For an extra-crispy finish, lightly brush or spray the outside of the tortillas with a small amount of olive oil.
Bake for 8–10 minutes.
Carefully flip each quesadilla and bake for another 5–8 minutes, until both sides are golden and crisp and the cheese has completely melted.
6. Slice and serve
Remove from the oven and let the quesadillas rest for 2–3 minutes.
Cut each into wedges and serve warm with Greek yogurt, salsa, avocado, or fresh cilantro.
💡 Tips for the Best Quesadillas
- Don’t overload the tortillas with filling.
- Cook the mushrooms until most of their moisture has evaporated.
- Let the cooked filling cool slightly before assembling.
- For extra protein, add shredded chicken, turkey, or cottage cheese to the filling.
- For a lower-carb version, use low-carb tortillas and check the package nutrition label.
🥗 High-Protein Variation
For a more filling meal, add 1 cup shredded cooked chicken to the spinach and mushroom mixture. You can also replace part of the shredded cheese with cottage cheese or use a high-protein tortilla.
