- ¾ cup powdered monk fruit/erythritol blend, or to taste

Wet ingredients
- ½ cup melted butter
- 3 large eggs
- ½ cup unsweetened almond milk
- 1 tsp vanilla extract
- ½ cup plain Greek yogurt
- 2 tbsp unsweetened peanut butter, optional

- 2 tbsp sugar-free chocolate chips
- 1 tbsp espresso powder for a deeper chocolate flavor

- Preheat: Heat oven to 350°F (175°C). Line a 9×5-inch loaf pan or 8×8-inch pan with parchment paper.
- Mix the dry ingredients: In a large bowl, whisk together almond flour, cocoa powder, protein powder, sweetener, baking powder, and salt.
- Mix the wet ingredients: In another bowl, whisk the melted butter, eggs, almond milk, vanilla, and Greek yogurt until smooth.
- Combine: Slowly add the wet mixture to the dry ingredients. Stir just until combined. Don’t overmix.
- Check the batter: It should be thick and fudgy. If it seems extremely thick, add another 1–2 tablespoons almond milk.
- Add chocolate: Fold in sugar-free chocolate chips if using.
- Bake: Transfer the batter to the prepared pan and smooth the top. Bake for 25–35 minutes, depending on the pan. The center should look set but still slightly soft.
- Cool completely: Let the cake cool in the pan for about 15 minutes, then transfer it to a rack. Allow it to cool fully before slicing so it becomes dense and fudgy.

Mix:
- ½ cup Greek yogurt
- ½ scoop chocolate protein powder
- 1 tbsp unsweetened cocoa powder
- Monk fruit sweetener to taste
Spread over the completely cooled cake.
