High-Protein Low-Carb Peanut Butter Chia Pudding
Creamy, filling, sugar-free, and packed with protein!
Ingredients — 1 serving
- 2 tbsp chia seeds
- ¾ cup unsweetened almond milk
- ½ scoop vanilla protein powder
- 1 tbsp natural peanut butter, no added sugar
- 1–2 tsp monk fruit sweetener, to taste
- ½ tsp vanilla extract
- Pinch of salt
- 1–2 tbsp unsweetened Greek yogurt, optional for extra creaminess
Instructions
- Add almond milk, protein powder, peanut butter, monk fruit, vanilla, and salt to a jar or bowl.
- Whisk thoroughly until the protein powder is completely dissolved.
- Stir in the chia seeds.
- Let it sit for 5 minutes, then stir again to prevent the chia seeds from clumping.
- Cover and refrigerate for at least 3–4 hours, preferably overnight.
- Stir before serving. Add a small spoonful of Greek yogurt on top if desired.

- A few crushed peanuts
- Unsweetened cocoa powder
- A few raspberries or strawberries
- Sugar-free chocolate chips
