Broccoli Cheddar Chicken Rollups
Juicy chicken breasts stuffed with tender broccoli and melty cheddar, then baked until golden and delicious. A simple weeknight dinner that feels special without requiring much work.

- 4 boneless, skinless chicken breasts
- 1½ cups broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 2 oz cream cheese, softened
- 2 tbsp grated Parmesan cheese
- 2 cloves garlic, minced
- ½ tsp Italian seasoning
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 1 tbsp olive oil or avocado oil
- ¼ cup additional shredded cheddar, for topping
- 1–2 tbsp chopped fresh parsley, optional
Instructions
- Prepare the broccoli
Steam or microwave the chopped broccoli for about 2–3 minutes, just until slightly tender. Let it cool and drain well so the filling doesn’t become watery. - Make the filling
In a bowl, combine the broccoli, 1 cup cheddar, cream cheese, Parmesan, garlic, Italian seasoning, and a little salt and pepper. Mix until evenly combined. - Prepare the chicken
Place each chicken breast between two pieces of plastic wrap or parchment paper. Gently pound with a meat mallet until about ¼-inch thick, being careful not to tear the chicken.
Season both sides with paprika, onion powder, salt, and black pepper.
- Fill and roll
Place a generous portion of the broccoli-cheddar mixture in the center of each chicken breast.
Starting from one end, carefully roll the chicken tightly around the filling. Secure each rollup with 1–2 toothpicks if needed.
- Sear the chicken
Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the chicken rollups seam-side down and sear for about 2–3 minutes per side, until lightly golden. - Add the cheese
Sprinkle the remaining ¼ cup cheddar over the tops of the rollups. - Bake
Transfer the skillet to a preheated 375°F (190°C) oven.
Bake for approximately 18–25 minutes, depending on the thickness of the chicken, until the center reaches 165°F (74°C).
- Rest and serve
Let the chicken rest for about 5 minutes before removing the toothpicks and slicing. Garnish with parsley if desired.
