High-Protein Low-Carb Strawberry Ricotta Bake

This creamy strawberry ricotta bake is made with protein-rich ricotta, Greek yogurt, eggs, and extra protein powder. It’s naturally sweet, soft in the center, and perfect for a high-protein breakfast or healthy dessert.

Ingredients

  • 1 cup (250 g) part-skim ricotta cheese
  • 1 cup (240 g) plain nonfat Greek yogurt
  • 2 large eggs
  • ½ cup (120 g) liquid egg whites
  • 1 scoop (30 g) vanilla whey protein isolate, preferably low-carb
  • 2 tablespoons (14 g) almond flour
  • ½ cup (75 g) fresh strawberries, chopped
  • 2–3 tablespoons erythritol or monk fruit sweetener, to taste
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon, optional
  • Pinch of salt

Instructions

1. Preheat the oven: Heat to 350°F (175°C). Lightly grease an 8-inch baking dish or four individual ramekins.

2. Mix the wet ingredients: In a large bowl, whisk together the ricotta, Greek yogurt, eggs, egg whites, vanilla extract, and sweetener until smooth.

3. Add the dry ingredients: Stir in the protein powder, almond flour, baking powder, cinnamon, and salt. Mix until combined. Avoid overmixing.

4. Add strawberries: Gently fold the chopped strawberries into the mixture, reserving a few pieces for the top.

5. Fill the dish: Pour the batter into the prepared baking dish and spread evenly. Add the remaining strawberry pieces on top.

6. Bake: Bake for 30–35 minutes, until the edges are lightly golden and the center is set. If using individual ramekins, begin checking after 20–25 minutes.

7. Cool and serve: Let rest for 10 minutes before serving. The bake will firm up as it cools. Enjoy warm or chilled.

Tips for the best results

  • More protein: Choose whey isolate with at least 25 g protein per scoop.
  • Fewer carbs: Use unsweetened Greek yogurt and a zero-calorie sweetener.
  • Creamier texture: Blend the ricotta before mixing.
  • Meal prep: Refrigerate in a sealed container for up to 3 days.

Diet suitability: This version is high-protein and low-carb, and may fit a keto-style diet depending on the brands and portion sizes. It is not zero-carb.
