Ingredients
- 1 cup (250 g) part-skim ricotta cheese
- 1 cup (240 g) plain nonfat Greek yogurt
- 2 large eggs
- ½ cup (120 g) liquid egg whites
- 1 scoop (30 g) vanilla whey protein isolate, preferably low-carb
- 2 tablespoons (14 g) almond flour
- ½ cup (75 g) fresh strawberries, chopped
- 2–3 tablespoons erythritol or monk fruit sweetener, to taste
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon cinnamon, optional
- Pinch of salt
Instructions
1. Preheat the oven: Heat to 350°F (175°C). Lightly grease an 8-inch baking dish or four individual ramekins.
2. Mix the wet ingredients: In a large bowl, whisk together the ricotta, Greek yogurt, eggs, egg whites, vanilla extract, and sweetener until smooth.
3. Add the dry ingredients: Stir in the protein powder, almond flour, baking powder, cinnamon, and salt. Mix until combined. Avoid overmixing.
4. Add strawberries: Gently fold the chopped strawberries into the mixture, reserving a few pieces for the top.
5. Fill the dish: Pour the batter into the prepared baking dish and spread evenly. Add the remaining strawberry pieces on top.
6. Bake: Bake for 30–35 minutes, until the edges are lightly golden and the center is set. If using individual ramekins, begin checking after 20–25 minutes.
7. Cool and serve: Let rest for 10 minutes before serving. The bake will firm up as it cools. Enjoy warm or chilled.
