Total Time: 22 minutes
Servings: 4 (8 roll-ups)
Ingredients
- 8 slices deli corned beef (about 8 oz)
- 8 slices Swiss cheese
- ½ cup sauerkraut, well drained
- 2 tablespoons cream cheese, softened
- 2 tablespoons sugar-free Thousand Island dressing
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 tablespoon butter or olive oil, for cooking
Optional keto coating:
- ¼ cup crushed pork rinds
- 2 tablespoons grated Parmesan cheese
Instructions
- Prepare the filling: In a small bowl, mix cream cheese, sugar-free Thousand Island dressing, Dijon mustard, garlic powder, and black pepper until smooth.
- Prepare the beef: Lay the corned beef slices flat on a clean surface. Place one slice of Swiss cheese on each.
- Add filling: Spread a thin layer of the creamy mixture over the cheese. Add a small amount of well-drained sauerkraut.
- Roll them up: Carefully roll each slice tightly, tucking in the filling. Secure with toothpicks if needed.
- Prepare coating (optional): Mix crushed pork rinds with Parmesan cheese. Lightly coat the outside of each roll-up for extra crunch.
- Cook: Heat butter or olive oil in a skillet over medium heat. Place roll-ups seam-side down and cook for 2–3 minutes per side until golden brown and crispy and the cheese is melted.
- Serve: Remove toothpicks and serve warm with extra sugar-free Thousand Island dressing for dipping.
