Prep Time: 10 minutes
Bake Time: 35–45 minutes
Cooling Time: 2 hours
Total Time: Approximately 3 hours
Servings: 6
Ingredients
- 2 cups cottage cheese
- 5 oz (about ⅔ cup) plain Greek yogurt
- 2 large eggs
- 2 tablespoons honey or powdered monk fruit sweetener
- 1 teaspoon vanilla extract (optional)
- Pinch of salt (optional)
Instructions
1. Prepare the oven
Preheat oven to 325°F (160°C). Lightly grease a 6-inch round cake pan or line it with parchment paper.
2. Blend the cottage cheese
Add cottage cheese to a blender or food processor. Blend until completely smooth and creamy, with no visible lumps.
3. Add the remaining ingredients
Add Greek yogurt, eggs, honey or sweetener, vanilla extract, and salt. Blend again until everything is smooth and fully combined.
4. Pour into the pan
Pour the cheesecake mixture into the prepared cake pan. Gently tap the pan on the counter to release any trapped air bubbles.
5. Bake the cheesecake
Bake for 35–45 minutes, or until the edges are set and the center has a slight jiggle.
Avoid overbaking, as this can make the cheesecake dry.
6. Cool completely
Turn off the oven and leave the cheesecake inside with the door slightly open for 10 minutes. Remove and let cool at room temperature.
7. Refrigerate
Cover and refrigerate for at least 2 hours, preferably overnight, until completely chilled and firm.
8. Slice and serve
Remove from the pan, slice into 6 portions, and enjoy your creamy homemade protein cheesecake!
