Buffalo Chicken Casserole

This flavorful and satisfying dish is perfect for a keto-friendly dinner or lunch.

Ingredients:

  • 2 cups chopped cauliflower
  • 4 oz cream cheese
  • 2 cups cooked chicken (shredded)
  • 2 cloves minced garlic
  • ½ cup Buffalo sauce
  • 3 tablespoons heavy cream
  • 4 oz shredded cheddar cheese

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F.

2. Prepare Cauliflower:

  • Place the chopped cauliflower in a microwave-safe dish.
  • Microwave for about 5 minutes to soften. Set aside.

3. Make Buffalo Sauce Mixture:

  • In the meantime, in a skillet over medium heat, add cream cheese, Buffalo sauce, and minced garlic.
  • Whisk together until the cream cheese is fully melted, and the mixture is smooth and well combined.

4. Combine Chicken and Cauliflower:

  • Once the cream cheese is melted, add in the shredded chicken and the softened cauliflower to the skillet.
  • Mix well until the chicken and cauliflower are coated evenly with the buffalo sauce mixture.
  • Remove the skillet from heat.

5. Assemble the Casserole:

  • Spray a baking dish with non-stick cooking spray.
  • Spoon the chicken and cauliflower mixture into the baking dish, spreading it out evenly.

6. Add Cream and Cheese:

  • Pour the heavy cream over the top of the mixture in the baking dish.
  • Sprinkle the shredded cheddar cheese evenly over the top.

7. Bake:

  • Place the baking dish in the preheated oven.
