Chicken Alfredo with Broccoli Bake

Ingredients:
- 3 tbsp butter, divided
- 2.5 lbs boneless skinless chicken breast, sliced
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp chicken broth
- 12 oz steam bag of frozen broccoli
- 3 garlic cloves, minced
- 1 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/2 tsp Italian seasoning
- 2/3 cup parmesan cheese, grated
- 1/4 cup pepper jack cheese, grated
- 3/4 cup mozzarella cheese, grated
- 1/4 tsp basil
Instructions:
- Cook Chicken:
- Melt 1 tbsp butter in a skillet.
- Season sliced chicken with salt and pepper before placing it in the skillet.
- Sear on both sides.
- Cover the skillet with a lid and simmer on low until the chicken is no longer pink.
- Remove chicken from the skillet and set aside.
- Deglaze the Pan:
- Pour 2 tbsp chicken broth into the hot skillet to deglaze it, scraping off the flavorful bits from the bottom with a wooden spoon. Leave the bits in the pan for added flavor.
- Prepare Broccoli:
- Steam the frozen broccoli in the microwave according to package directions or steam on the stove.
- Make Alfredo Sauce:
- Add 2 tbsp butter to the skillet along with minced garlic. Sauté for 2 minutes until fragrant.
- Add softened cream cheese, heavy whipping cream, and Italian seasoning to the minced garlic. Stir continuously with a whisk on medium heat until thoroughly combined.
- Reduce to medium/low heat and simmer until the heavy whipping cream has reduced and thickened, whisking to prevent sticking.
- Add Cheeses:
- Once the sauce has thickened, add parmesan and pepper jack cheese. Continue stirring until the cheeses melt, and the sauce is smooth.
- Combine Ingredients:
- Drain the steamed broccoli.
- Add the chicken and broccoli to the keto alfredo sauce, stirring until thoroughly combined. Transfer the mixture to a baking dish.
- Bake:
- Sprinkle mozzarella cheese over the chicken alfredo broccoli mixture, then sprinkle basil on top.
- Place the baking dish in the oven on the top rack under the broiler for 1-2 minutes or until the mozzarella cheese begins to bubble and brown.
- Serve:
- Remove from the oven and let it cool for a few minutes before serving.
