A rich, chocolatey mini-waffle “cookie” filled with lightly sweetened whipped cream, then frozen until firm. It’s a simple low-carb treat with extra protein and no regular sugar.

Ingredients
Chocolate Chaffle Cookies
- 1 large egg
- 2 tbsp finely ground almond flour
- 1 tbsp unsweetened cocoa powder
- 1 tbsp unflavored or chocolate protein powder
- ¼ tsp vanilla extract
- 1–2 tsp stevia or preferred zero-calorie sweetener, to taste
- ⅛ tsp baking powder
- Pinch of salt
- 1–2 tsp unsweetened almond milk, only if the batter seems too thick
- Nonstick spray, for the waffle maker
High-Protein Cream Filling
- ¼ cup heavy whipping cream
- ¼ cup plain Greek yogurt
- 1 tbsp vanilla or unflavored protein powder
- Stevia or another zero-sugar sweetener, to taste
- ¼ tsp vanilla extract
Instructions
1. Make the chocolate batter
In a small bowl, whisk together the egg, almond flour, cocoa powder, protein powder, baking powder, salt, vanilla, and sweetener.
Mix until smooth. If the batter is very thick, stir in 1–2 teaspoons of unsweetened almond milk.
Let the batter sit for about 1 minute so the almond flour can absorb some moisture.
2. Cook the chaffles
Preheat a mini waffle maker and lightly spray it with nonstick spray.
Divide the batter into two portions. Add one portion to the waffle maker, close the lid, and cook for about 2–3 minutes, or until the chaffle is cooked through and slightly crisp around the edges.
Carefully remove and repeat with the remaining batter.
Allow both chocolate chaffles to cool completely. They will firm up as they cool.
3. Make the protein cream
Add the heavy whipping cream, Greek yogurt, protein powder, vanilla, and sweetener to a bowl.
Whip with a hand mixer until thick and creamy. Don’t overbeat.
For an even lighter filling, you can use a little more Greek yogurt and slightly less heavy cream.
4. Assemble the sandwiches
Place one cooled chocolate chaffle on a plate.
Spread a generous layer of the whipped protein cream over the top.
Place the second chaffle on top and gently press down.
For cleaner edges, use a spoon or small spatula to smooth the filling around the sides.
5. Freeze
Place the sandwiches on a parchment-lined plate or tray.
Freeze for 1–2 hours, or until the filling is firm.
For a softer, ice-cream-like texture, let the sandwich sit at room temperature for 5–10 minutes before eating.
Optional Additions
For extra chocolate flavor, add:
- A few sugar-free chocolate chips
- ½ tsp instant espresso powder to the chaffle batter
- A light dusting of unsweetened cocoa powder
- A few crushed roasted almonds
Low-Carb & High-Protein Notes
Using Greek yogurt and protein powder in the filling makes this version substantially higher in protein than the original whipped-cream-only filling.
For the lowest carbs, use:
- Unsweetened cocoa powder
- Fine almond flour
- A zero-sugar sweetener
- Unsweetened almond milk
- A low-carb protein powder
