Creamy, Rich, Low-Carb & Perfect for Parties! πŸ’•πŸ˜‹

Made this for a work party and it was gone before they even announced people could fix their plates! πŸ˜‚ I guess you could say everyone loved it!

This cheesecake is creamy, smooth, rich, and satisfying without traditional sugar. It’s a wonderful keto-friendly dessert for birthdays, gatherings, or whenever you’re craving cheesecake.

⏱️ Recipe Details

  • Prep Time: 20 minutes
  • Bake Time: 50–60 minutes
  • Chill Time: 4–6 hours
  • Total Time: About 5–7 hours
  • Servings: 10–12

πŸ›’ Ingredients

πŸ₯œ Keto Crust

  • 1Β½ cups almond flour
  • ΒΌ cup melted butter
  • 2 tablespoons powdered erythritol or monk-fruit sweetener
  • Β½ teaspoon vanilla extract
  • Pinch of salt

πŸ§€ Cheesecake Filling

  • 24 oz (680g) full-fat cream cheese, softened
  • ΒΎ cup powdered keto-friendly sweetener
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Β½ cup sour cream
  • 1 tablespoon lemon juice
  • Pinch of salt

Optional Topping

  • Sugar-free whipped cream
  • Fresh strawberries or raspberries
  • A few chopped pecans
  • Sugar-free berry sauce

If keeping it strictly keto, choose toppings according to their carbohydrate content.

πŸ‘©β€πŸ³ Step-by-Step Instructions

1. Prepare the Oven πŸ”₯

Preheat your oven to 325Β°F (165Β°C).

Line the bottom of a 9-inch springform pan with parchment paper.

Lightly grease the sides.

2. Make the Keto Crust πŸ₯œ

In a bowl, combine:

  • Almond flour
  • Powdered sweetener
  • Melted butter
  • Vanilla
  • Salt

Mix until the ingredients form a moist, crumbly mixture.

Press it firmly and evenly into the bottom of the springform pan.

Bake for 8–10 minutes, just until lightly golden.

Remove and allow it to cool while you prepare the filling.

πŸ§€ 3. Make the Cheesecake Filling

Place the softened cream cheese in a large mixing bowl.

Beat on low to medium speed until smooth and creamy.

Add the powdered sweetener gradually and mix until incorporated.

Avoid whipping the mixture excessivelyβ€”too much air can cause the cheesecake to puff and crack during baking.

4. Add the Eggs πŸ₯š

Add the eggs one at a time, mixing on low speed after each addition.

Stop mixing as soon as each egg is incorporated.

Then add:

  • Vanilla extract
  • Sour cream
  • Lemon juice
  • Salt

Mix just until smooth.

5. Fill the Pan

Pour the cheesecake mixture over the cooled crust.

Gently smooth the top with a spatula.

Tap the pan lightly on the counter a couple of times to release large air bubbles.

πŸ”₯ 6. Bake

Place the cheesecake in the preheated 325Β°F (165Β°C) oven.

Bake for approximately 50–60 minutes.

The cheesecake should look set around the edges while the center still has a slight jiggle.

Don’t wait for the center to become completely firmβ€”it will continue setting as it cools.

7. Cool Slowly

Turn off the oven and leave the cheesecake inside with the oven door slightly open for about 30 minutes.

Remove it from the oven and let it cool completely at room temperature.

This gradual cooling helps reduce cracking.

❄️ 8. Refrigerate

Once cooled, cover the cheesecake and refrigerate for at least:

4–6 hours

For the best texture, refrigerate it overnight.

The cheesecake becomes firmer, creamier, and easier to slice as it chills.

πŸ“ 9. Decorate & Serve

Before serving, remove the cheesecake from the springform pan.

Top with a little sugar-free whipped cream and a few berries if desired.

Cut into 10–12 slices and serve chilled.

πŸ’‘ Tips for a Perfect Keto Cheesecake

βœ”οΈ Use Room-Temperature Ingredients

Softened cream cheese and room-temperature eggs blend more smoothly.

βœ”οΈ Don’t Overmix

Too much air can cause the cheesecake to rise and then collapse.

βœ”οΈ Don’t Overbake

A slight jiggle in the center is exactly what you’re looking for.

βœ”οΈ Chill Thoroughly

Don’t rush the chilling stageβ€”it makes a huge difference in texture.

βœ”οΈ Use Powdered Sweetener

Powdered sweetener generally dissolves more smoothly than granulated sweetener.

πŸ₯₯ Easy Flavor Variations

πŸ‹ Lemon Cheesecake

Add another tablespoon of lemon juice and some finely grated lemon zest.

🍫 Chocolate

Add unsweetened cocoa powder and a little extra sweetener, keeping in mind that cocoa contributes some carbohydrates.

πŸ₯œ Pecan

Mix chopped toasted pecans into the crust and sprinkle a few over the top.

πŸ“ Berry

Add a small amount of fresh raspberries or strawberries just before serving.

πŸ“Š Approximate Nutrition

For 12 slices, depending on the specific ingredients and sweetener:

  • Calories: ~300–350
  • Protein: ~7–9g
  • Net Carbs: ~3–5g
  • Fat: ~28–32g

The exact nutrition varies considerably by cream cheese, almond flour, sweetener, and toppings.

❀️ Final Note

If you make this for a party, don’t be surprised if it disappears before everyone gets a chance to grab a slice! πŸ˜‚πŸ°

If you love easy keto recipes, save this one and keep coming back for more! β€οΈπŸ˜‹
