High-Protein Cottage Cheese Flatbread

High-Protein • Low-Carb • Gluten-Free • Keto-Friendly

Soft, flexible, and easy to make with just a few ingredients. Perfect for wraps, sandwiches, quesadillas, or pizza-style flatbreads.

🛒 Ingredients

Makes 2 medium flatbreads

  • 1 cup (225–230 g) cottage cheese
  • 2 large eggs
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: 2 tbsp shredded mozzarella or Parmesan for extra flavor

👩‍🍳 Instructions

  1. Preheat the oven
    Preheat your oven to 350°F (175°C).

Line a large baking sheet with parchment paper. Lightly spray or brush the parchment with oil to make peeling easier.

  1. Blend the mixture
    Add cottage cheese, eggs, garlic powder, Italian seasoning, salt, and black pepper to a blender or food processor.

Blend for 30–60 seconds, until completely smooth and creamy with no visible cottage-cheese lumps.

  1. Spread the batter
    Pour the mixture onto the parchment-lined baking sheet.

Use a spatula to spread it into a thin, even rectangle or two smaller rectangles. Aim for roughly ⅛–¼ inch (3–6 mm) thickness.

Try to keep the edges similar in thickness to the center so they cook evenly.

  1. Bake
    Bake at 350°F (175°C) for approximately 20–25 minutes, or until the flatbread is completely set and lightly golden around the edges.

If the center still looks wet or jiggles significantly, continue baking for another 3–5 minutes.

  1. Cool completely
    Remove the baking sheet from the oven and let the flatbread cool for 5–10 minutes.

This step is important—the flatbread becomes easier to handle and peel as it cools.

  1. Peel and cut
    Gently loosen the edges with a spatula or your fingers, then carefully peel the flatbread away from the parchment.

Cut into 2 large wraps or leave whole depending on how you want to use it.

🌯 How to Use It

Fill with:

  • Grilled chicken + lettuce + ranch
  • Turkey + cheese + vegetables
  • Scrambled eggs + cheese
  • Taco-seasoned beef + avocado
  • Tuna or chicken salad
  • Mozzarella + tomato + grilled chicken

For a crispy quesadilla, fill it with cheese and your favorite protein, fold it, and toast it in a skillet for 1–2 minutes per side.

💪 Approximate Nutrition

For the whole recipe, using regular cottage cheese:

  • Protein: ~30–32 g
  • Carbs: ~8–10 g
  • Fat: ~15–18 g

Per flatbread, if making 2:

  • Protein: ~15–16 g
  • Net carbs: roughly ~3–5 g

Exact nutrition varies by cottage cheese and egg size.

  • Blend thoroughly for the smoothest texture.
  • Don’t spread it paper-thin; very thin edges can become brittle.
  • Use full-fat or low-fat cottage cheese depending on your preferred nutrition.
  • Let it cool before peeling—it becomes much easier to handle.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
