Tender seasoned flank steak, spicy jalapeños, and a rich three-cheese filling wrapped in a low-carb tortilla and toasted until golden and crispy.
🛒 Ingredients — 4 Wraps
Steak Filling
- 1 lb (450 g) flank steak, thinly sliced
- 1 tbsp olive oil or avocado oil
- 2 cloves garlic, minced
- ½ tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Jalapeño 3-Cheese Filling
- 4 oz (115 g) cream cheese, softened
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
- 1–2 fresh jalapeños, finely diced
- 1 tbsp chopped green onions
- ½ tsp garlic powder
- Pinch of salt
For the Wraps
- 4 low-carb/keto tortillas
- 1 tsp butter or avocado oil for searing
- Optional: sliced jalapeños for topping
👩🍳 Directions
- Prepare the steak:
Slice the flank steak thinly against the grain. Toss with olive oil, garlic, smoked paprika, onion powder, salt, and black pepper. - Cook the steak:
Heat a cast-iron skillet over medium-high heat. Add the steak in a single layer and sear for about 2–3 minutes per side, or until cooked to your preferred doneness. Remove from the skillet and let rest briefly. - Make the cheesy filling:
In a bowl, combine softened cream cheese, mozzarella, cheddar, diced jalapeños, green onions, garlic powder, and salt. Mix until creamy and well combined. - Fill the tortillas:
Warm the tortillas for a few seconds so they become flexible. Spread the cheese mixture down the center of each tortilla and add the cooked steak. - Roll:
Fold in the sides and tightly roll each tortilla into a wrap, keeping the filling tucked inside. - Sear until golden:
Wipe out the skillet if necessary. Add a small amount of butter or avocado oil over medium heat. Place the wraps seam-side down and cook for about 2–3 minutes per side, turning carefully, until golden and crisp and the cheese is melted. - Serve:
Slice in half and serve hot with extra jalapeños or a low-carb dipping sauce.
🌶️ Make It Spicier
Add sliced pickled jalapeños, a pinch of cayenne, or a little hot sauce to the cheese filling.
💡 Tips
- Slice the steak against the grain for a more tender bite.
- Don’t overcrowd the skillet when cooking the steak.
- For a milder wrap, remove the jalapeño seeds and membranes.
- Let the steak rest for a few minutes before assembling.
