- 1 egg
- ¼ cup grated Parmesan cheese
- 2 tbsp almond flour
- 2 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
For the homemade tzatziki
- ½ cup plain nonfat Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh dill
- Salt and black pepper to taste
For serving
- 4 small whole-wheat or low-carb pita pockets
- 1 cup diced cucumber
- 1 cup diced tomatoes
- ¼ red onion, thinly sliced
- Fresh parsley
- Optional: crumbled feta cheese
Instructions
1. Prepare the meatball mixture
In a large mixing bowl, combine ground turkey, egg, Parmesan, almond flour, minced garlic, oregano, paprika, onion powder, salt, and black pepper. Mix gently until everything is combined.
2. Shape the meatballs
Roll the mixture into approximately 16 small meatballs, keeping them similar in size for even cooking.
3. Cook the meatballs
Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for approximately 10–12 minutes, turning occasionally until golden brown and cooked through.
The internal temperature should reach 165°F (74°C).
4. Make the tzatziki sauce
In a small bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and black pepper. Stir until creamy. Refrigerate while preparing the remaining ingredients.
5. Prepare the vegetables
Dice the cucumber and tomatoes. Thinly slice the red onion and chop fresh parsley.
6. Assemble the pita pockets
Warm the pita bread slightly. Spread a generous layer of tzatziki inside each pocket.
Add 4 turkey meatballs, diced cucumber, tomatoes, red onion, and fresh parsley.
Finish with a little extra tzatziki and optional feta cheese.
7. Serve and enjoy!
Serve immediately while the meatballs are warm and juicy. Add extra lemon juice for a fresh Mediterranean finish.
