Cook Time: 25–30 minutes
Total Time: About 50 minutes
🥩 Ingredients
For the Filling
- 1 lb (500 g) lean ground beef
- 1 small onion, finely grated
- 1 medium carrot, grated
- 1 small zucchini, grated and excess moisture squeezed out
- 2 garlic cloves, minced
- 1 large egg
- 1 tbsp Worcestershire sauce
- 1 tsp dried Italian seasoning
- ½ tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp finely chopped fresh parsley
- 2 tbsp almond flour
For the Keto Fathead Dough
- 1½ cups shredded mozzarella cheese
- 2 tbsp cream cheese
- 1 cup finely ground almond flour
- 1 large egg
- ½ tsp baking powder
- ¼ tsp salt
For Brushing
- 1 egg, beaten
- 1 tsp sesame seeds, optional
👩🍳 Instructions
1. Prepare the vegetables
Finely grate the onion, carrot, and zucchini.
Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove as much excess moisture as possible. This is important because too much moisture can make the filling watery.
2. Make the beef filling
Add the ground beef, grated onion, carrot, zucchini, garlic, egg, Worcestershire sauce, Italian seasoning, paprika, onion powder, salt, pepper, parsley, and almond flour to a large bowl.
Mix gently with your hands or a wooden spoon until everything is evenly combined.
Don’t overmix, as this can make the filling dense.
3. Make the fathead dough
Add the mozzarella and cream cheese to a microwave-safe bowl.
Microwave in 20–30 second intervals, stirring between each interval, until the cheese is completely melted and smooth.
Add the almond flour, baking powder, and salt. Mix well.
Allow the mixture to cool for 1–2 minutes, then knead in the egg until a soft dough forms.
If the dough becomes sticky, lightly oil your hands or chill it for about 5 minutes.
4. Roll out the dough
Place the dough between two sheets of parchment paper.
Roll it into a rectangle approximately ¼ inch (5–6 mm) thick.
Try to make the edges as straight as possible so the rolls are easy to shape.
5. Divide the dough
Cut the dough lengthwise into two long strips.
Divide the beef mixture into two portions and shape each portion into a long sausage-like log along the center of each dough strip.
Leave a little space around the edges.
6. Roll the sausage rolls
Carefully lift one side of the dough over the beef filling and continue rolling until the filling is completely enclosed.
Place the rolls seam-side down on a parchment-lined baking sheet.
Repeat with the second roll.
7. Cut into portions
Using a sharp knife, cut each long roll into 4 equal pieces, giving you 8 sausage rolls total.
Arrange them with a little space between each piece.
8. Add the egg wash
Brush the tops lightly with beaten egg.
If desired, sprinkle with sesame seeds for a classic sausage-roll finish.
9. Bake
Preheat the oven to 400°F (200°C).
Bake for 25–30 minutes, or until the dough is golden brown and the beef filling is cooked through.
The center of the beef should reach 160°F (71°C).
For extra browning, you can broil for the final 1–2 minutes, watching carefully.
10. Rest and serve
Allow the sausage rolls to rest for 5 minutes before serving. This helps the filling set and makes them easier to handle.
🥫 Keto Dipping Sauce
Mix together:
- 3 tbsp mayonnaise
- 1 tbsp sugar-free tomato sauce or ketchup
- 1 tsp Dijon mustard
- ½ tsp Worcestershire sauce
- Pinch of smoked paprika
Serve alongside the warm sausage rolls.
💡 Tips for the Best Keto Sausage Rolls
- Squeeze the zucchini very well to prevent soggy filling.
- Keep the fathead dough relatively thin so the sausage rolls don’t become overly heavy.
- If the dough is difficult to handle, chill it for 5–10 minutes before rolling.
- Use finely shredded mozzarella because it melts more evenly.
- Let the baked rolls rest briefly before serving.
🥬 Lower-Carb Option
Carrot contributes more carbohydrates than zucchini, so if you’re aiming for very low-carb keto, reduce the carrot to ½ medium carrot and replace the difference with additional zucchini or finely chopped mushrooms.
These sausage rolls are keto-friendly and high in protein, but the exact macros will depend on the beef, cheese, almond flour, and vegetable quantities used.
