These easy lasagna cups give you all the flavors of classic lasagna without traditional pasta. Perfect for a quick lunch, dinner, or low-carb snack!
🛒 Ingredients — Makes 12 cups
- 1 lb (450 g) ground beef or Italian sausage
- 1 cup sugar-free marinara sauce
- 12 small low-carb/keto tortillas, cut into circles to fit your muffin tin
- 1 cup ricotta cheese
- 1½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ¼ tsp black pepper
- Salt, to taste
- Optional: 2 tbsp chopped parsley or basil
👩🍳 Instructions
- Cook the meat:
Brown the ground beef or sausage in a skillet over medium-high heat. Break it into small pieces and cook until fully browned. Drain excess grease. - Season:
Stir in garlic powder, Italian seasoning, black pepper, and a little salt. - Add marinara:
Pour in the sugar-free marinara and simmer for 2–3 minutes. - Prepare the cups:
Preheat oven to 400°F (200°C). Lightly spray a 12-cup muffin tin. Press one low-carb tortilla circle into each cup. - Layer:
Add a small spoonful of meat sauce, followed by about 1 tablespoon ricotta, then mozzarella. Repeat with another small layer if your cups are deep enough. - Top with cheese:
Sprinkle Parmesan and the remaining mozzarella over each cup. - Bake:
Bake for 8–10 minutes, until the cheese is melted and bubbling and the edges are lightly crisp. - Rest & serve:
Let them cool for 2–3 minutes, then carefully remove the cups. Garnish with parsley or basil.
💪 For a higher-protein, lower-carb version
Use lean ground beef, part-skim ricotta, plenty of meat, and a marinara with no added sugar and low net carbs. Check the tortilla label too, since carb counts vary considerably between brands.
Approximate per cup: 170–220 calories, 14–18 g protein, and about 3–6 g net carbs, depending on the brands and tortilla size.
