Keto Hamburger “The Bomb” Soup 🍲

Ingredients
- 1 lb (450 g) ground beef/hamburger
- 8 oz (225 g) cream cheese, softened
- 1 can (10 oz/283 g) Rotel diced tomatoes & green chilies
- 4 cups (32 oz) beef broth
- ½ green bell pepper, diced
- ¼ small onion, finely diced
- 1 tsp garlic powder
- ½ tsp black pepper
- Salt, to taste
- Optional: ½ tsp smoked paprika or chili powder
Directions
- Brown the ground beef in a large pot over medium heat, breaking it into small pieces. Drain excess grease if needed.
- Add the diced green pepper and onion. Cook for 3–5 minutes until softened.
- Add the Rotel, beef broth, garlic powder, pepper, and optional spices.
- Bring to a gentle boil, then reduce heat and simmer 10–15 minutes.
- Cut the softened cream cheese into cubes and add it gradually, stirring until completely melted and the soup becomes creamy.
- Simmer another 3–5 minutes on low. Taste and adjust salt.
- Serve hot. Optional toppings: a little shredded cheddar, chopped green onion, or fresh cilantro.
