Keto Beef Stroganoff

Ingredients:

1 tablespoon coconut oil
3 spring onions, sliced
2 cloves garlic, diced
500g beef, cut into strips
Salt and pepper, to taste
Fresh parsley, oregano, thyme, sage, finely chopped
2 tablespoons tomato paste
1 red capsicum, diced
1 1/2 cups mushrooms, sliced
1 cup beef stock (homemade beef bone broth recommended)
300ml sour cream

Instructions:

Heat coconut oil in a large frypan over medium heat. Add sliced spring onions and diced garlic. Sauté for a couple of minutes until fragrant.

Add beef strips to the pan. Season with salt, pepper, and finely chopped herbs. Brown the beef while stirring occasionally.

Once the beef is browned, add diced red capsicum and sliced mushrooms to the pan. Cook for a couple of minutes until the vegetables start to soften.

Pour in the beef stock and add tomato paste to the pan. Stir well to combine all ingredients.

Reduce the heat to low and add sour cream to the pan. Gently stir until the sour cream is fully incorporated into the sauce.

Cover the pan with a lid and simmer the stroganoff for 5 to 10 minutes, depending on desired thickness.

Once the stroganoff reaches your preferred consistency, remove from heat.

Serve the keto beef stroganoff over zoodles, leafy greens, or cauliflower rice for a low-carb meal option.
