Ingredients
- 2 cups heavy whipping cream
- 4 large egg yolks
- ½ cup granulated erythritol, preferably powdered for a smoother texture
- 2 tablespoons instant espresso powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
1. Heat the cream
Pour the heavy whipping cream into a medium saucepan. Add the espresso powder and salt. Heat over medium-low heat, stirring until the espresso dissolves and the cream is hot but not boiling.
2. Whisk the egg yolks
In a separate heatproof bowl, whisk the egg yolks with the erythritol until the mixture becomes smooth and slightly pale.
3. Temper the eggs
Slowly pour about ½ cup of the warm cream mixture into the egg yolks while whisking constantly. Gradually add another ½ cup, continuing to whisk. This helps prevent the eggs from scrambling.
4. Cook the custard
Pour the tempered egg mixture back into the saucepan. Cook over low heat, stirring constantly with a spatula, until the custard thickens enough to coat the back of a spoon. For food safety, heat the egg mixture to 160°F (71°C), stirring continuously, and avoid boiling.
5. Add vanilla and cool
Remove the saucepan from the heat and stir in the vanilla extract. Strain the custard through a fine-mesh sieve if needed for an extra-smooth texture.
Let it cool, then cover and refrigerate for at least 3–4 hours, or until completely cold.
6. Churn the ice cream
Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–30 minutes, until thick and creamy.
7. Freeze until firm
Transfer the ice cream to a freezer-safe container. Freeze for 2–4 hours for a firmer, scoopable consistency.
No ice cream maker? Pour the chilled mixture into a shallow freezer-safe container. Freeze for about 4–6 hours, stirring thoroughly every 30–45 minutes during the first 2–3 hours to help reduce ice crystals.
8. Serve
Let the ice cream stand at room temperature for 5–10 minutes before scooping. Serve plain or garnish with a light dusting of espresso powder or a few sugar-free chocolate shavings.
