Ingredients
- 2 medium boneless, skinless chicken breasts (about 400 g)
- 3 medium zucchini, spiralized into noodles
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- ¼ cup grated Parmesan cheese
- 2 tablespoons cream cheese, optional
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons chicken broth, if needed
- Fresh basil, optional, for garnish
Instructions
1. Prepare the chicken: Cut the chicken breasts into bite-sized pieces. Season with paprika, Italian seasoning, salt, and black pepper.
2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, turning occasionally, until golden and cooked through to an internal temperature of 165°F (74°C). Transfer to a plate.
3. Cook the garlic and tomatoes: In the same skillet, add the minced garlic and cook for 30 seconds. Add the cherry tomatoes and cook for 3–4 minutes until softened and juicy.
4. Add the spinach: Stir in the fresh spinach and cook for 1–2 minutes until wilted.
5. Make it creamy: Add the Parmesan and optional cream cheese. Stir until melted, adding a little chicken broth if needed to loosen the sauce.
6. Add zucchini noodles: Stir in the zucchini noodles and cook for 2–3 minutes until just tender. Avoid overcooking so they do not become watery.
7. Combine and serve: Return the cooked chicken to the skillet. Toss everything together and heat for another minute. Garnish with fresh basil and extra Parmesan, if desired.
