Ingredients:

  • 2 tbsp olive oil
  • 1 lb ground meat (ground chicken works well)
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 small onion, chopped

For the Creamy Fajita Sauce:

  • 8 oz cream cheese
  • 1 cup chicken stock
  • 1/2 cup heavy whipping cream
  • 2 tsp crushed garlic
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups grated Mexican blend cheese

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the ground meat and cook until browned. Once done, set aside.
  3. To prepare the Creamy Fajita Sauce, in the same skillet, add the cream cheese (broken into chunks), chicken stock, heavy whipping cream, crushed garlic, dried oregano, ground cumin, chili powder, paprika, salt, and black pepper. Whisk the mixture until smooth, then set it aside.
  4. In the same skillet (or a new one) with the remaining olive oil, cook the diced peppers and chopped onion until they begin to soften.
  5. Once the peppers and onions are soft, stir in the cooked ground meat.
  6. Transfer the pepper and meat mixture into a 2-quart casserole dish.
  7. Pour the prepared Creamy Fajita Sauce over the meat and pepper mixture in the casserole dish.
  8. Sprinkle the grated Mexican blend cheese evenly over the top of the casserole.
  9. Place the casserole dish in the preheated oven and bake for about 35 minutes, or until the cheese is melted and bubbly.
  10. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
