Keto Krispy Kreme Donuts

For the donuts:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup erythritol or other keto-friendly sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract

For the glaze:

  • 1/4 cup powdered erythritol
  • 2-3 tbsp heavy cream
  • 1/2 tsp vanilla extract

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
  2. In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Mix well to ensure even distribution of the dry ingredients.
  3. In a separate bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry mixture and stir until you have a smooth batter.
  5. Carefully spoon or pipe the batter into the greased donut pan, filling each cavity about 2/3 full.
  6. Bake in the preheated oven for about 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  7. Once the donuts are done baking, remove them from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. While the donuts are cooling, prepare the glaze by whisking together the powdered erythritol, heavy cream, and vanilla extract until you have a smooth glaze. Adjust the consistency by adding more cream if needed.
  9. Once the donuts have cooled, dip each one into the glaze, allowing any excess glaze to drip off.
  10. Place the glazed donuts back on the wire rack to allow the glaze to set.
  11. Enjoy your Keto Krispy Kreme-style donuts once the glaze is set!
