Keto Krispy Kreme Donuts
Ingredients:
For the donuts:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup erythritol or other keto-friendly sweetener
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted
- 4 large eggs
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
For the glaze:
- 1/4 cup powdered erythritol
- 2-3 tbsp heavy cream
- 1/2 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
- In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Mix well to ensure even distribution of the dry ingredients.
- In a separate bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract until well combined.
- Gradually add the wet mixture to the dry mixture and stir until you have a smooth batter.
- Carefully spoon or pipe the batter into the greased donut pan, filling each cavity about 2/3 full.
- Bake in the preheated oven for about 15-18 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- Once the donuts are done baking, remove them from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- While the donuts are cooling, prepare the glaze by whisking together the powdered erythritol, heavy cream, and vanilla extract until you have a smooth glaze. Adjust the consistency by adding more cream if needed.
- Once the donuts have cooled, dip each one into the glaze, allowing any excess glaze to drip off.
- Place the glazed donuts back on the wire rack to allow the glaze to set.
- Enjoy your Keto Krispy Kreme-style donuts once the glaze is set!
