Here’s a detailed recipe for your delicious Keto Mexican Taco Lasagna:

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning (or a mix of chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper)
  • 1 cup salsa (sugar-free, if possible)
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers (any color)
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1 head of cauliflower, grated or finely chopped
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef (or turkey) until browned. Add the diced onion and minced garlic, cooking until the onion is translucent and the garlic is fragrant.
  3. Stir in the taco seasoning, salsa, diced tomatoes, and diced bell peppers. Let it simmer for a few minutes until the flavors meld together. Season with salt and pepper to taste.
  4. In a separate bowl, mix together the softened cream cheese and shredded cheddar cheese until well combined.
  5. In a baking dish, spread a layer of the cauliflower at the bottom. This acts as a low-carb alternative to traditional lasagna noodles.
  6. Next, spread half of the meat mixture over the cauliflower layer.
  7. Spoon half of the cream cheese mixture over the meat layer and spread it evenly.
  8. Sprinkle half of the shredded Monterey Jack cheese and sliced black olives over the cream cheese layer.
  9. Repeat the layers with the remaining cauliflower, meat mixture, cream cheese mixture, shredded Monterey Jack cheese, and sliced black olives.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes.
  11. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
  12. Once done, sprinkle chopped fresh cilantro over the top for a burst of freshness.
  13. Let it cool for a few minutes before slicing and serving.
