High-Protein Mediterranean Chicken, Veggie & Feta One-Pan
A hearty, flavorful one-pan meal featuring juicy chicken, tender zucchini, colorful vegetables, and creamy feta. It’s naturally low in carbohydrates and packed with protein, making it a satisfying choice for a simple weeknight dinner.
Ingredients
- 3 large boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into rounds
- 1 pint (about 300 g) cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 3–4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
1. Prepare the chicken
Pat the chicken pieces dry with paper towels. Season with oregano, basil, thyme, smoked paprika, garlic powder, salt, and black pepper. Toss well so the seasoning coats every piece.
2. Sear the chicken
Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken in a single layer and cook for about 5–7 minutes, turning occasionally, until golden on the outside and cooked through. Transfer the chicken to a plate.
3. Cook the vegetables
Add the remaining tablespoon of olive oil to the same skillet. Add the red onion, bell pepper, and zucchini. Cook for 5–6 minutes, stirring occasionally, until the vegetables begin to soften.
4. Add garlic and tomatoes
Stir in the minced garlic and cook for about 30 seconds. Add the halved cherry tomatoes and cook for another 2–3 minutes, just until they begin to soften.
5. Bring everything together
Return the cooked chicken to the skillet and toss everything together. Cook for another 2–3 minutes so the flavors combine.
6. Add feta
Sprinkle the feta cheese evenly over the chicken and vegetables. For softer, lightly melted feta, cover the skillet for 1–2 minutes. For browned feta, place the oven-safe skillet under the broiler for 1–2 minutes, watching closely.
7. Finish and serve
Remove from the heat and drizzle with fresh lemon juice. Garnish with chopped parsley and a little extra black pepper.
Protein Boost
For an even higher-protein meal, use 3½–4 chicken breasts or add an additional 1/4 cup feta. You can also serve it with a spoonful of plain Greek yogurt on the side.
