Ingredients: 1 pound ground beef (or ground Italian sausage for added flavor) 1 small onion, diced 2 cloves garlic, minced 1 14.5-ounce can diced tomatoes 1 6-ounce can tomato paste 4 cups beef broth 1 teaspoon dried basil 1 teaspoon dried oregano 1/2 teaspoon salt (adjust to taste) 1/4 teaspoon black pepper (adjust to taste) 2 cups shredded mozzarella cheese 1 cup ricotta cheese Fresh basil and grated Parmesan cheese for garnish (optional)

Instructions:

  1. In a large soup pot or Dutch oven, cook the ground beef (or Italian sausage) over medium-high heat until browned. Break it into smaller pieces as it cooks. If there’s excess fat, drain it.
  2. Add the diced onions and minced garlic to the pot and cook for a few minutes until the onions become translucent.
  3. Stir in the diced tomatoes, tomato paste, beef broth, dried basil, dried oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld together.
  4. In a separate bowl, combine the shredded mozzarella and ricotta cheese.
  5. To serve, ladle the soup into bowls, and then top each bowl with a spoonful of the cheese mixture. You can garnish with fresh basil and grated Parmesan cheese if desired.
