Ingredients:
For the casserole:
- 1 pound ground beef or ground turkey
- 1/2 cup low-carb pizza sauce (look for one with no added sugar)
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1/4 cup sliced black olives
- 1/4 cup sliced green bell peppers
- 1/4 cup sliced onions (optional)
- 1/4 cup sliced mushrooms (optional)
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef or turkey over medium-high heat until it’s browned and cooked through. Drain any excess fat.
- Stir in the pizza sauce, dried oregano, garlic powder, and a pinch of salt and pepper. Let it simmer for a few minutes to combine the flavors.
- In a greased 9×13 inch baking dish, spread the meat mixture evenly as the base of your casserole.
- Sprinkle half of the shredded mozzarella cheese over the meat.
- Layer the sliced pepperoni, black olives, and any other toppings you prefer on top of the cheese.
- Sprinkle the remaining mozzarella cheese over the toppings.
- Bake the casserole in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- If you like, you can broil the casserole for a minute or two at the end to get the cheese on top nicely browned, but be sure to watch it closely to prevent burning.
- Remove from the oven and let it cool for a few minutes before serving.
