Taco Spaghetti

Ingredients:

 

For the spaghetti:

  • 1 lb (450g) of zucchini noodles (zoodles) or spaghetti squash (for a more traditional spaghetti texture)
  • 1 lb (450g) ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 packet of taco seasoning (check for keto-friendly options or make your own)
  • Salt and pepper to taste
  • Olive oil for cooking

For the toppings:

  • Grated cheddar or Monterey Jack cheese
  • Sliced black olives
  • Chopped fresh cilantro
  • Sliced green onions
  • Sliced jalapeños (if you like it spicy)
  • Sour cream or Greek yogurt (as a low-carb alternative)
  • Avocado slices (optional)

Instructions:

  1. In a large skillet, heat a bit of olive oil over medium heat. Add the diced onion and minced garlic and sauté until they become fragrant and translucent.
  2. Add the ground beef or turkey to the skillet and cook until it’s browned and cooked through. Break it up into smaller pieces as it cooks. Drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes, and tomato paste. Allow the mixture to simmer for a few minutes, letting the flavors meld. If you’d like the sauce to be a bit thinner, you can add a splash of water or beef broth. Season with salt and pepper to taste.
  4. While the meat sauce is simmering, prepare your zucchini noodles or spaghetti squash. You can spiralize the zucchini or cook the spaghetti squash as you prefer (roasting or microwaving).
  5. Serve the keto taco spaghetti by placing a portion of zoodles or spaghetti squash on a plate and spooning the taco meat sauce over it. Top with grated cheese, sliced olives, chopped cilantro, green onions, and jalapeños.
  6. Add a dollop of sour cream or Greek yogurt and some avocado slices if you like. You can also sprinkle extra taco seasoning or hot sauce for more flavor.
