5-Minute Keto Coconut Cake
5-Minute Keto Coconut Cake — No Flour, No Sugar
A soft, moist coconut cake with rich coconut flavor, made without wheat flour or added sugar! This quick keto-friendly dessert uses eggs and coconut to create a simple treat in just minutes.
Prep time: 2 minutes
Cook time: 1–3 minutes in the microwave
Servings: 1–2
Ingredients
- 1 large egg
- 3 tablespoons unsweetened finely shredded coconut
- 1 tablespoon coconut cream or heavy whipping cream
- 1–2 tablespoons powdered erythritol or monk fruit sweetener, to taste
- ¼ teaspoon baking powder
- ¼ teaspoon vanilla extract
- Pinch of salt
- ½ tablespoon melted butter or coconut oil
Instructions
1. Mix the wet ingredients: In a microwave-safe mug or small bowl, whisk the egg with the cream, melted butter, and vanilla extract.
2. Add the dry ingredients: Stir in the shredded coconut, powdered sweetener, baking powder, and salt until evenly combined.
3. Prepare the cake: Let the batter rest for about 1 minute so the coconut absorbs some moisture.
4. Microwave: Cook on high for 60–90 seconds. If the center is still wet, continue in 10–15-second intervals until set. Microwave strength and mug size affect cooking time.
5. Rest and serve: Let the cake rest for 1 minute before eating. Sprinkle with extra unsweetened coconut, if desired.
Oven option: Bake in a small greased ramekin at 175°C (350°F) for approximately 12–18 minutes, until the center is set.
Optional keto toppings
- Unsweetened whipped cream
- A few sugar-free dark chocolate chips
- Toasted unsweetened coconut flakes
- A small spoonful of coconut cream

Keto tips
- Use unsweetened shredded coconut; sweetened coconut contains added sugar.
- Choose a powdered, keto-friendly sweetener instead of sugar or honey.
- Avoid regular flour and cornstarch.
- Check the nutrition label on coconut cream, as some products contain added sugar.
Note: This cake is flourless, sugar-free when made with a suitable sweetener, and generally keto-friendly in a moderate portion. It is not especially high in protein, but it makes a quick, low-carb coconut dessert.
