Yield
Ingredients
- 1 cup (225 g) low-fat cottage cheese
- 3 large eggs
- ½ cup (50 g) almond flour
- ¼ cup (about 25–30 g) unflavored or vanilla protein powder, preferably low-carb
- ½ teaspoon baking powder
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon (optional)
- ¼ cup (35 g) fresh blueberries, chopped if large
- 1–2 tablespoons unsweetened almond milk, if needed
- Low-carb sweetener to taste, optional
- Butter or cooking spray for the pan
Instructions
1. Blend the wet ingredients. Add cottage cheese, eggs, and vanilla extract to a blender. Blend until smooth.
2. Combine the dry ingredients. In a bowl, mix almond flour, protein powder, baking powder, and cinnamon.
3. Prepare the batter. Pour the cottage cheese mixture into the dry ingredients. Stir until just combined. Add a little almond milk if the batter is too thick. Let it rest for 2 minutes.
4. Fold in the blueberries. Gently mix in the blueberries, distributing them evenly throughout the batter.
5. Heat the skillet. Lightly grease a nonstick pan and heat over medium-low heat.
6. Make the pancake bites. Spoon approximately 1 tablespoon of batter per pancake into the pan. Cook for 2–3 minutes, until the edges look set and the bottoms are golden.
7. Flip and finish cooking. Carefully flip and cook for another 1–2 minutes, until the centers are cooked through. Cook in batches.
8. Serve. Enjoy warm with a spoonful of plain Greek yogurt, a few extra blueberries, or sugar-free syrup.

Tips for maximum protein and fewer carbs
- Choose cottage cheese with a higher protein content and no added sugar.
- Use a protein powder with minimal carbohydrates.
- Avoid honey, maple syrup, and regular sugar.
- Keep the blueberries to ¼ cup for the whole batch.
- Don’t increase the protein powder too much, as it can make the bites dry.
