Ingredients

- ¾ cup almond flour

- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- Pinch of salt
For the Cinnamon Topping
- 1 tbsp melted butter
- 1–2 tbsp keto-friendly sweetener
- 1 tsp cinnamon
👩🍳 Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Melt the cheese: Add mozzarella and cream cheese to a microwave-safe bowl. Microwave in 20–30 second intervals, stirring between each, until completely melted and smooth.
- Make the dough: Add almond flour, coconut flour, cinnamon, sweetener, vanilla, and beaten egg to the melted cheese. Mix well until a soft dough forms.
- Knead: Allow the dough to cool slightly, then knead it with your hands until everything is evenly combined. If it becomes difficult to work with, warm it for a few seconds.
- Shape the pretzels: Divide the dough into portions. Roll each piece into a long rope and shape it into a pretzel.
- Bake: Place the pretzels on the prepared baking sheet and bake for approximately 12–16 minutes, or until lightly golden.
- Add the cinnamon topping: Brush the warm pretzels with melted butter. Mix cinnamon and keto-friendly sweetener, then sprinkle over the top.
- Cool and serve: Let them cool for a few minutes before serving. They’ll firm up slightly as they cool.
