This Keto Cloud Cake is soft, airy, and delicately sweet with a melt-in-your-mouth texture. Whipped egg whites give the cake its signature cloud-like lightness, while cream cheese adds richness and almond flour keeps it low in carbohydrates.

Servings: 8 | Prep Time: 15 minutes | Bake Time: 30–35 minutes | Oven: 325°F (165°C)

🛒 Ingredients

  • 4 large eggs, separated
  • 4 oz (115 g) cream cheese, softened
  • ½ cup almond flour
  • ⅓ cup powdered erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cream of tartar
  • 2 tbsp unsweetened almond milk or heavy cream

👩‍🍳 Instructions

Preheat the oven to 325°F (165°C). Line the bottom of an 8-inch round cake pan with parchment paper and lightly grease the sides. Separate the eggs carefully, placing the whites in a clean, dry mixing bowl.

In another bowl, beat the softened cream cheese until smooth. Add the egg yolks, almond flour, sweetener, vanilla, baking powder, salt, and almond milk or heavy cream. Mix until you have a smooth, thick batter.

Add the cream of tartar to the egg whites. Using a hand or stand mixer, beat until stiff, glossy peaks form. This step is important because the whipped whites create the cake’s airy texture.

Gently fold about one-third of the whipped egg whites into the cream cheese mixture to loosen the batter. Add the remaining egg whites in two additions, folding carefully with a spatula. Do not overmix, or you will lose the air from the egg whites.

Pour the batter into the prepared cake pan and smooth the top gently. Bake for 30–35 minutes, or until the cake is lightly golden and the center is set. Avoid opening the oven repeatedly while baking.

Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Carefully remove it from the pan and transfer it to a wire rack to cool completely. The cake may settle slightly as it cools, which is normal.

🍓 Serving Suggestions

Serve plain, or top with a spoonful of unsweetened whipped cream, a few fresh berries, or a light dusting of powdered keto sweetener. For extra protein, serve with plain Greek yogurt or a low-carb protein cream.

💡 Keto Tips

Use powdered rather than granulated sweetener for a smoother texture. Make sure your almond flour is finely ground, and avoid adding regular sugar or sweetened toppings if you want to keep the cake keto-friendly.
