🧀 Keto Pimento Cheese

Creamy, cheesy, tangy, and delicious! This low-carb keto pimento cheese takes just a few minutes to prepare and makes a great dip, spread, or snack.

🛒 Ingredients

  • 2 cups (200 g) shredded sharp cheddar cheese
  • ½ cup full-fat cream cheese, softened
  • ¼ cup mayonnaise
  • ⅓ cup diced pimentos, drained well
  • 1 tbsp finely chopped jalapeño, optional
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • ¼ tsp black pepper
  • Salt, to taste
  • 1–2 tbsp chopped fresh chives or parsley, optional

👩‍🍳 Instructions

  1. Soften the cream cheese: Let it sit at room temperature for about 15–20 minutes so it mixes easily.
  2. Make the creamy base: Add cream cheese and mayonnaise to a bowl. Stir until smooth.
  3. Add the flavor: Mix in garlic powder, onion powder, smoked paprika, black pepper, and a small pinch of salt.
  4. Add cheese and pimentos: Fold in the shredded cheddar and drained pimentos.
  5. Add heat: Stir in jalapeño if you like a little spice.
  6. Chill: Cover and refrigerate for 30–60 minutes. This allows the flavors to develop and gives the mixture a thicker texture.
  7. Serve: Stir once before serving and garnish with chives or parsley.

🥒 Keto Ways to Serve It

  • With cucumber slices
  • With celery sticks
  • Spread on low-carb crackers
  • Stuffed into mini bell peppers
  • With crispy cheese chips
  • As a topping for boiled eggs

💪 Protein Tip

For a slightly higher-protein version, replace ¼ cup of the mayonnaise with ¼ cup plain Greek yogurt. It will still be low-carb while adding protein and a little tang.

High-protein: Moderate; higher with Greek yogurt added.
