ππ§ Cheesy Garlic Chicken, Potato & Green Bean Bake
A comforting one-pan dinner loaded with juicy seasoned chicken, tender potatoes, crisp-tender green beans and broccoli, all finished with a delicious golden cheesy garlic topping. Itβs easy enough for a weeknight but hearty enough for the whole family!
π Ingredients
For the chicken & vegetables
- 1Β½ lb (680 g) boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 1Β½ lb (680 g) baby potatoes, halved or quartered
- 2 cups fresh green beans, trimmed
- 2 cups broccoli florets
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- Β½ tsp onion powder
- Β½ tsp salt
- Β½ tsp black pepper
For the cheesy garlic topping
- 1 cup shredded mozzarella
- Β½ cup shredded cheddar or Parmesan
- 2 tbsp melted butter
- 1β2 cloves garlic, minced
- 1 tbsp chopped fresh parsley
π©βπ³ Instructions
1. Prepare the oven
Preheat your oven to 400Β°F (200Β°C). Lightly grease a large baking dish or sheet pan.
2. Season the potatoes π₯
Place the potatoes in a large bowl. Add about half of the olive oil, paprika, Italian seasoning, onion powder, salt and pepper. Toss until evenly coated.
3. Start baking the potatoes
Spread the potatoes in a single layer in the baking dish. Bake for 20 minutes first, since potatoes take longer to become tender than the chicken and vegetables.
4. Season the chicken π
Meanwhile, toss the chicken pieces with the remaining olive oil, minced garlic, a little paprika, Italian seasoning, salt and pepper.
5. Add the chicken and vegetables
Remove the pan from the oven. Add the seasoned chicken, green beans and broccoli around the potatoes. Toss gently so everything is coated with the seasoning and pan juices.
6. Bake again
Return the dish to the oven and bake for another 20β25 minutes, or until the chicken reaches 165Β°F (74Β°C) internally and the potatoes are fork-tender.
7. Make the cheesy garlic topping π§π§
Mix the melted butter with the minced garlic and parsley. Sprinkle the mozzarella and cheddar/Parmesan evenly over the chicken and vegetables, then drizzle the garlic butter over the top.
8. Get it golden
Return the dish to the oven for 5β8 minutes, until the cheese is melted and bubbling. For an extra golden top, broil for 1β2 minutes, watching carefully.
9. Rest and serve
Let the bake rest for 5 minutes before serving. Spoon the cheesy chicken, potatoes and vegetables onto plates and drizzle with any delicious garlic-butter juices left in the pan.

For a higher-protein meal:
- Use chicken breast instead of thighs.
- Increase chicken to 2 lb (900 g).
- Use reduced-fat mozzarella if desired.
- Add extra broccoli or green beans for more volume without substantially increasing calories.
