A comforting one-pan dinner loaded with juicy seasoned chicken, tender potatoes, crisp-tender green beans and broccoli, all finished with a delicious golden cheesy garlic topping. It’s easy enough for a weeknight but hearty enough for the whole family!

πŸ›’ Ingredients

For the chicken & vegetables

  • 1Β½ lb (680 g) boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1Β½ lb (680 g) baby potatoes, halved or quartered
  • 2 cups fresh green beans, trimmed
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Β½ tsp onion powder
  • Β½ tsp salt
  • Β½ tsp black pepper

For the cheesy garlic topping

  • 1 cup shredded mozzarella
  • Β½ cup shredded cheddar or Parmesan
  • 2 tbsp melted butter
  • 1–2 cloves garlic, minced
  • 1 tbsp chopped fresh parsley

πŸ‘©β€πŸ³ Instructions

1. Prepare the oven
Preheat your oven to 400Β°F (200Β°C). Lightly grease a large baking dish or sheet pan.

2. Season the potatoes πŸ₯”
Place the potatoes in a large bowl. Add about half of the olive oil, paprika, Italian seasoning, onion powder, salt and pepper. Toss until evenly coated.

3. Start baking the potatoes
Spread the potatoes in a single layer in the baking dish. Bake for 20 minutes first, since potatoes take longer to become tender than the chicken and vegetables.

4. Season the chicken πŸ—
Meanwhile, toss the chicken pieces with the remaining olive oil, minced garlic, a little paprika, Italian seasoning, salt and pepper.

5. Add the chicken and vegetables
Remove the pan from the oven. Add the seasoned chicken, green beans and broccoli around the potatoes. Toss gently so everything is coated with the seasoning and pan juices.

6. Bake again
Return the dish to the oven and bake for another 20–25 minutes, or until the chicken reaches 165Β°F (74Β°C) internally and the potatoes are fork-tender.

7. Make the cheesy garlic topping πŸ§„πŸ§€
Mix the melted butter with the minced garlic and parsley. Sprinkle the mozzarella and cheddar/Parmesan evenly over the chicken and vegetables, then drizzle the garlic butter over the top.

8. Get it golden
Return the dish to the oven for 5–8 minutes, until the cheese is melted and bubbling. For an extra golden top, broil for 1–2 minutes, watching carefully.

9. Rest and serve
Let the bake rest for 5 minutes before serving. Spoon the cheesy chicken, potatoes and vegetables onto plates and drizzle with any delicious garlic-butter juices left in the pan.

πŸ’ͺ High-Protein Option

For a higher-protein meal:

  • Use chicken breast instead of thighs.
  • Increase chicken to 2 lb (900 g).
  • Use reduced-fat mozzarella if desired.
  • Add extra broccoli or green beans for more volume without substantially increasing calories.

🌿 Easy Variations

  • Low-carb: Replace the potatoes with cauliflower or extra broccoli/green beans.
  • Extra cheesy: Add another Β½ cup mozzarella.
  • Spicy: Add red pepper flakes or cayenne.
  • Creamy: Add a few spoonfuls of cream cheese mixed with the garlic butter before topping.
  • Mediterranean: Add oregano, lemon zest and a sprinkle of feta after baking.

πŸ“Š Approximate Nutrition

For 6 servings, depending on the exact ingredients:

  • Calories: ~450–520
  • Protein: ~40–45 g
  • Carbohydrates: ~30–35 g
  • Fat: ~20–25 g

Keto note: This version is not keto because of the potatoes. For a keto/very-low-carb version, substitute the potatoes with cauliflower and use a low-carb cheese topping.

πŸ”₯ One pan, minimal cleanup, lots of cheesy garlic flavorβ€”and a complete meal in every serving!
